Candy Cane Beets are also know as Striped Beets or Chioggia Beets. They look similar to other beets on the outside but when you cut into them, they have a beautiful pink and white stripe, similar to a candy cane!
What do candy cane beets taste like? Candy Cane Beets are a bit milder in flavor than ordinary red beets, which makes them perfect to eat raw. They also don’t bleed as much color as red beets which is a bit plus for cleanup!
How to Eat
When served raw, candy cane beets are a fantastic addition to fresh salads. And just like regular red or yellow beets, they can also be boiled, steamed, roasted, sautéed, and pickled. Their greens are also edible and very nutritious and can also added to salads or added to a stir fry.
How to Store Beets
Store beets in the refrigerator placed in a perforated plastic bag in the vegetable drawer. Beets will keep in the refrigerator for 1 to 3 months. If there is no room in the refrigerator, beets can also be packed in a container such as a bucket, plastic storage box, or cooler.
You can also freeze your beets. Slice or chop the beets up, spread them out on a cookie sheet, and flash freeze them. This will prevent the beets from freezing together in clumps. Once your beets are fully frozen, package them in freezer bags; and return them to the freezer. They’ll keep indefinitely, but are best when used within one year.
Roasted Candy Cane Beets
-4 sugar striped beets
-1/4 cup orange juice
-1 tbsp vinegar (balsamic or red wine)
-3 tbsp olive oil
-1 tbsp dried thyme
-2 tsp salt
-1 tsp black pepper
1.Preheat oven to 400 degrees.
2.Remove the tops and cut the beets into quarters.
3.In a large bowl, combine all of the ingredients and toss to coat.
4.After completely coated in the oil mixture place in a 13×9 inch glass dish and bake for 40 minutes.
5.Toss the roasted beets in the vinegar and orange juice and serve.
Candy Cane Beet Salad with Goat Cheese

-1 tablespoon fresh lemon juice
-1 tablespoon white wine vinegar
-2 teaspoons liquid honey or sugar
-1/4 teaspoon fine sea salt
-2-3 tablespoons extra-virgin olive oil, or use pistachio oil for a special treat
-1 pound Candy Cane beets, peeled
-1/4 cup thinly sliced red onion
-4 cups mixed salad greens_1/4 cup fresh crumbled goat cheese
-2 tablespoons chopped pistachios
1.Whisk the lemon juice, vinegar, honey (or sugar), and salt in a small bowl until honey is dissolved. Gradually pour in the oil and whisk to combine.
2.Shave the beets into ribbons with a spiral slicer, or into thin discs with a mandoline or sharp knife.
3.Put the beets in a salad bowl with the onion and greens. Drizzle with enough dressing to coat, about 2 tablespoons, and toss together. Sprinkle the goat cheese and pistachios over the salad. Serve with additional dressing on the side.
